AIM of IP
Food engineering of several institutions of
higher education are brought together to
study the subject of functional food.
• Intensive Program (IP)
– Intensive: we have a busy schedule =almost 80 hr
– Program: all about Functional Foods
• Financed by the European Union
• Cooperation between four Institutions of
Higher Education

• Theme : Tradional Foods and Their Functional
Properties
• You will make a project about tradional food
– Choose and make your own tradional food
– Tradional food should have functional properties
– Increase its functional properties /make it
functional
– Analyse their functional properties
• We have 44 students
– Each team with 4-5 students
– In each team every nationality
• Three site visits to companies
• Six evening activities for the students and
teachers
• 10 teaching days + 2 days for social program
with visits to Cappodocia

– Introduction to the IP and practical arrangements
– Introduction to functional food and team
discussion
